EDUARDO ZAMORA - HEAD MIXOLOGIST

Trained under acclaimed mentor Bannie Kang at the original ANTI:DOTE, Eduardoβ€”known affectionately as Eduβ€”honed his craft in Macau’s dynamic flair bartending scene before rising through the ranks at some of Singapore’s most respected bars, including MOβ€―BAR, Smokeβ€―&β€―Mirrors, and Junior The Pocket Bar.

With a deep appreciation for South-East Asian ingredients and a flair for storytelling, Edu curates cocktail experiences that blend folklore with flavour. His creative vision ensures that ANTI:DOTE remains as memorable for its evocative ambience as it is for its inventive drinks.

CHEF ONG SZELING - JUNIOR SOUS CHEF

Born and raised in Taiping, Malaysia, Ong Szelingβ€”known as Chef Lingβ€”found her passion for cooking during a hospitality course in Penang, which inspired her to pursue formal culinary training. Over 15 years, she has risen to become Junior Sous Chef at ANTI:DOTE and the first female chef to helm an outlet at Fairmont Singapore.

Her accolades include Champion of the 8th Young Chef Competition (2015), Gold at the MORS Pin Competition in Macao (2017) and multiple industry awards. Drawing on her extensive experience in semi-fine dining, she brings creativity, discipline and quiet determination to shape ANTI:DOTE’s refreshed culinary vision.
